1 ½ cups graham cracker crumbs

¼ cup granulated sugar

6 tablespoon butter melted

2 (8 oz) pkgs cream cheese softened

½ cup granulated sugar

¼ cup sour cream

½ teaspoon vanilla extract

2 eggs room temperature

1 ½ cups fresh strawberries chopped

5 tablespoon sugar

3 tablespoon water

1 tablespoon lemon juice

2 teaspoon cornstarch

½ cup white chocolate chips


Instructions

  • Preheat your oven to 325°F (160°C) and grease a 9×9-inch baking pan.
  • In a bowl, mix graham cracker crumbs, ¼ cup granulated sugar, and melted butter until well combined. Press the mixture evenly into the bottom of the prepared pan to form the crust.
  • In a large mixing bowl, beat the softened cream cheese and ½ cup granulated sugar until smooth. Add the sour cream, vanilla extract, and eggs, mixing until just blended.
  • Pour the cheesecake mixture over the crust and smooth the top with a spatula. Bake for 30 minutes or until the edges are set and the center is slightly jiggly.
  • While the cheesecake cools, prepare the strawberry topping by combining chopped strawberries, 5 tablespoon sugar, water, lemon juice, and cornstarch in a saucepan over medium heat. Cook until the strawberries release their juices and the mixture thickens, about 5-7 minutes. Let cool.
  • Melt the white chocolate chips in a microwave or double boiler until smooth. Drizzle over the cooled cheesecake bars.
  • Once fully cooled, cut the cheesecake into squares, top with strawberry mixture, and serve chilled.

Notes
