Instructions
Wash your apricots thoroughly. Cut them in half, remove the pits, and chop them into small pieces.
In a medium saucepan, combine your chopped apricots, sugar, lemon juice, and salt. Stir gently to combine.
Place the saucepan over medium heat. Stir occasionally until the mixture comes to a gentle boil, about 5 minutes.
Using a potato masher or the back of a fork, mash the apricot mixture gently to your desired consistency.
