  • In a large, heavy-bottomed pot, melt the butter together with olive oil over medium heat. Add the sliced onions and salt, cooking for about 10 minutes, stirring frequently. We want those onions to soften and turn a lovely golden brown.
  • Once the onions are soft, sprinkle in the sugar. This helps them caramelize. Keep cooking for an additional 30-40 minutes, stirring often. Look for a nice deep brown color; patience is key here!
  • When the onions are wonderfully caramelized, add the white wine. Scrape any bits from the bottom of the pot; that’s where the flavor is! Let the wine simmer until mostly evaporated.
  • Stir in the beef broth, thyme, and bay leaf. Bring the soup to a gentle simmer and cook uncovered for about 30 minutes.
  • While the soup simmers, preheat your oven to 400°F (200°C). Slice the baguette into thick pieces and place them on a baking sheet. Toast until golden brown, about 10 minutes.
  • Remove the bay leaf from the soup. Taste and adjust seasoning to your preference.
  • Ladle the soup into oven-safe bowls. Top generously with the toasted baguette slices and sprinkle with the Gruyère cheese.
