Description

Twice-baked potatoes are a comforting and flavorful side dish. With a crispy skin, creamy filling, and cheesy goodness, these potatoes are sure to be a hit at any meal. Here’s everything you need to know to make the perfect twice-baked potatoes every time!

Ingredients

Scale
  • 4 large russet potatoes
  • 2 tbsp olive oil
  • Salt and pepper, to taste
  • 1/2 cup sour cream
  • 1/4 cup butter, melted
  • 1/2 cup milk (or more for desired creaminess)
  • 1 1/2 cups shredded cheddar cheese
  • 1/4 cup green onions, chopped
  • 1/4 cup crispy bacon bits (optional)

Instructions

  • Bake the Potatoes: Preheat the oven to 400°F (200°C). Wash and dry the potatoes, then rub them with olive oil and sprinkle with salt. Place them directly on the oven rack and bake for 45-60 minutes until tender.
  • Scoop Out the Flesh: Let the potatoes cool slightly, then slice them in half lengthwise. Carefully scoop out the potato flesh into a mixing bowl, leaving a small border around the edges to keep the skins intact.
  • Mash the Potato Flesh: Mash the scooped-out potato with a fork or potato masher. Add melted butter, sour cream, milk, salt, and pepper, and mix until smooth and creamy.
  • Add Cheese and Toppings: Stir in half of the shredded cheddar cheese, green onions, and bacon bits (if using).
  • Fill the Potato Skins: Spoon the creamy mashed potato mixture back into the potato skins. Top with the remaining cheddar cheese.
  • Bake Again: Place the stuffed potatoes on a baking sheet and bake for another 15-20 minutes, until the cheese is melted and bubbly, and the potatoes are golden on top.
  • Serve and Enjoy: Garnish with extra green onions or bacon bits if desired. Serve warm and enjoy!

Notes

  • Feel free to customize your twice-baked potatoes with other mix-ins like garlic, ranch dressing, or different cheeses like mozzarella or Parmesan.
  • For an extra crispy skin, you can broil the potatoes for 2-3 minutes at the end of baking.
  • Make-ahead option: Assemble the potatoes and refrigerate them for up to 24 hours. Bake at 350°F (175°C) for 20-25 minutes when ready to serve.
