1 ½ cups all-purpose flour
1 cup granulated sugar
½ cup unsweetened cocoa powder (plus extra for dusting)
2 teaspoons baking powder
1 teaspoon baking soda
½ teaspoon salt
½ cup unsalted butter, softened
2 large eggs
1 cup buttermilk
2 teaspoons vanilla extract
1 cup strong brewed coffee, cooled
1 cup mascarpone cheese
1 cup heavy cream
3 tablespoons powdered sugar (for frosting)
Preheat your oven to 350°F (175°C) and line a standard cupcake pan with cupcake liners.
In a large bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt until everything is well combined.
Add the softened butter, eggs, buttermilk, vanilla extract, and brewed coffee. Mix on medium speed for about 2-3 minutes until everything is smooth.
Pour the batter into the lined cupcake pan, filling each liner about ⅔ full.
Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
Let the cupcakes cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
In a medium bowl, whisk together the mascarpone cheese and heavy cream until it reaches soft peaks.
Add the powdered sugar and gently mix until combined.
Once cupcakes are cooled, frost them generously with the mascarpone cream.
Dust a little cocoa powder on top for that classic tiramisu touch.
