1 cup of brown sugar, packed
1 cup of granulated sugar

2 tablespoons lemon juice
3 tablespoons cornstarch
2 tablespoons unsalted butter, cut into cubes
1 double-crust pie pastry
2 cups whole milk
¼ cup granulated sugar
3 large egg yolks
2 tablespoons cornstarch
1 teaspoon pure vanilla extract
Instructions
Preheat the oven to 425°F (220°C).
In a large bowl, toss the sliced apples with both sugars, cinnamon, nutmeg, salt, lemon juice, and cornstarch until well combined. Allow it to sit for about 10-15 minutes.
Roll out your pie dough on a floured surface and fit it into a 9-inch pie dish.
Spoon the apple mixture into the prepared crust, and pour in that syrup from the bowl. Dot the top with cubes of butter.
Roll out the second pie crust and lay it over the filling. Cut slits or create a lattice pattern on top.
Crimp the edges to seal in the filling. Brush the top crust with an egg wash.
Place your pie on a baking sheet and bake for about 45-50 minutes, checking the edges.
Once golden brown and bubbling, remove the pie from the oven and let it cool for at least 1 hour.
