- 2 large chicken breasts, halved lengthwise
- 2 tbsp olive oil
- 3 cloves garlic, minced
- 1 cup cherry tomatoes, halved
- 2 cups fresh spinach
- ½ cup chicken broth
- ½ cup heavy cream (optional for a creamy version)
- 1 tsp dried oregano
- ½ tsp salt
- ½ tsp black pepper
- ¼ tsp red pepper flakes (optional)
- ¼ cup grated Parmesan (for serving)
Instructions

Sear the Chicken:
- Heat 1 tbsp olive oil in a skillet over medium heat.
- Season chicken with salt, pepper, and oregano, then cook for 4-5 minutes per side until golden and cooked through. Remove and set aside.

Sauté the Garlic and Tomatoes:
- In the same skillet, add 1 tbsp olive oil and minced garlic. Cook until fragrant (30 seconds).
- Add cherry tomatoes and cook for 3 minutes until they soften.

Simmer the Sauce:
- Pour in chicken broth (and cream if using). Stir and simmer for 2 minutes.
- Add spinach, cooking until wilted.

Combine & Serve:
- Return the chicken to the pan, coating it in the sauce.
- Garnish with Parmesan and serve warm.

- Swap chicken breasts for chicken thighs for extra tenderness.
- Add mushrooms or bell peppers for more flavor and texture.
