  • 2 large chicken breasts, halved lengthwise
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 2 cups fresh spinach
  • ½ cup chicken broth
  • ½ cup heavy cream (optional for a creamy version)
  • 1 tsp dried oregano
  • ½ tsp salt
  • ½ tsp black pepper
  • ¼ tsp red pepper flakes (optional)
  • ¼ cup grated Parmesan (for serving)

Instructions

  • Sear the Chicken:

    • Heat 1 tbsp olive oil in a skillet over medium heat.
    • Season chicken with salt, pepper, and oregano, then cook for 4-5 minutes per side until golden and cooked through. Remove and set aside.
  • Sauté the Garlic and Tomatoes:

    • In the same skillet, add 1 tbsp olive oil and minced garlic. Cook until fragrant (30 seconds).
    • Add cherry tomatoes and cook for 3 minutes until they soften.
  • Simmer the Sauce:

    • Pour in chicken broth (and cream if using). Stir and simmer for 2 minutes.
    • Add spinach, cooking until wilted.
  • Combine & Serve:

    • Return the chicken to the pan, coating it in the sauce.
    • Garnish with Parmesan and serve warm.

  • Swap chicken breasts for chicken thighs for extra tenderness.
  • Add mushrooms or bell peppers for more flavor and texture.
