  • 2 lbs beef chuck, cut into 1-inch cubes
  • 3 tablespoons olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 4 medium carrots, sliced into rounds
  • 3 celery stalks, chopped
  • 4 medium potatoes, diced
  • 6 cups beef broth
  • 1 tablespoon tomato paste
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • 4 crusty bread bowls

  • Instructions

  • Heat 2 tablespoons olive oil in a large heavy pot over medium-high heat. Season the beef cubes generously with salt and pepper. Once the oil is hot, add the beef in batches and sear until browned on all sides. Remove the beef and set it aside.
  • In the same pot, add the remaining tablespoon of olive oil. Add the diced onion and sauté until translucent, about 5 minutes. Add the minced garlic, and stir for another minute.
  • Stir in the carrots, celery, and potatoes. Cook for about 3-4 minutes.
  • Return the browned beef to the pot. Add the beef broth, tomato paste, Worcestershire sauce, thyme, and rosemary, mixing well.
  • Bring the stew to a gentle boil, then lower the heat to a simmer. Cover and let it cook for about 2 hours, stirring occasionally.
  • After 2 hours, taste the stew and adjust seasoning if necessary.
  • Preheat your oven according to the bread bowl package instructions. Once baked, cut a circle on top of the bread bowls and hollow out the inside.
  • Ladle the beef stew into the hollowed bread bowls and serve.
