For the Cake:
- 1 cup all-purpose flour
- 1 ½ tsp baking powder
- ¼ tsp salt
- 5 large eggs, separated
- 1 cup granulated sugar, divided
- 1 tsp vanilla extract
- ⅓ cup whole milk
For the Milk Soak:
- 1 can (12 oz) evaporated milk
- 1 can (14 oz) sweetened condensed milk
- ½ cup whole milk
For the Topping:
- 1 cup heavy whipping cream
- 3 tbsp powdered sugar
- 1 tsp vanilla extract
- Ground cinnamon (optional, for garnish)
Instructions
- Prepare the Cake:
- Preheat oven to 175°C (350°F) and grease a 9×13-inch pan.
- Mix flour, baking powder, and salt. Set aside.
- Beat egg yolks with ¾ cup sugar until pale. Add vanilla and milk, then mix in the dry ingredients.
- In another bowl, beat egg whites until stiff peaks form, gradually adding the remaining ¼ cup sugar.
- Fold egg whites into yolk mixture. Pour batter into the pan and bake for 25-30 minutes until a toothpick comes out clean.
- Make the Milk Soak:
- In a bowl, whisk together evaporated milk, sweetened condensed milk, and whole milk.
- Poke holes all over the cake using a fork, then slowly pour the milk mixture over the cake while it’s still warm. Let it soak for at least 2 hours in the fridge.
- Whip the Cream & Serve:
- Beat heavy cream, powdered sugar, and vanilla until stiff peaks form.
- Spread whipped cream over the cake and sprinkle with cinnamon, if desired.

- Best when chilled overnight.
- Add fresh fruit like berries or mango for extra flavor.
- For a stronger flavor, drizzle with a little rum or liqueur before soaking.
