1 ½ cups graham cracker crumbs
⅓ cup granulated sugar
½ cup unsalted butter, melted
16 oz cream cheese, softened
1 cup powdered sugar
1 teaspoon vanilla extract
1 cup heavy whipping cream
1 cup diced pineapple
1 cup diced mango
1 cup sliced strawberries
1 banana, sliced
Fresh mint leaves for garnish (optional)
Preheat your oven to 350°F (175°C).
In a medium bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Press firmly into the bottom of a 9-inch springform pan.
Bake the crust for 8-10 minutes until lightly golden. Remove from the oven and let cool.
In a large bowl, beat cream cheese until creamy. Gradually mix in powdered sugar and vanilla until smooth.
In another bowl, whip heavy cream until stiff peaks form. Gently fold whipped cream into the cream cheese mixture.
Spoon the filling over the cooled crust and smooth it out. Refrigerate for at least 4 hours or overnight.
Just before serving, layer on the fresh fruits and garnish with mint leaves.
Release the springform pan and slice the cheesecake. Serve cold.
