  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped

  • 1 cup pineapple chunks (fresh or canned)
  • ½ cup pineapple juice
  • 3 tbsp soy sauce
  • 1 tbsp honey
  • 1 tbsp rice vinegar
  • ½ tsp ginger, grated
  • ½ tsp red pepper flakes (optional)
  • 2 cups cooked jasmine rice
  • 1 tbsp cornstarch + 2 tbsp water (for thickening)
  • 2 tbsp green onions, chopped (for garnish)
  • 1 tbsp sesame seeds (optional)

Instructions

  • Cook the Chicken: Heat olive oil in a pan over medium heat. Add diced chicken and cook until golden brown.
  • Sauté Veggies: Add bell peppers and garlic, cooking for 2-3 minutes until fragrant.
  • Make the Sauce: Stir in pineapple chunks, pineapple juice, soy sauce, honey, rice vinegar, ginger, and red pepper flakes.
  • Thicken the Sauce: Mix cornstarch with water, add to the pan, and stir until the sauce thickens.
  • Serve: Spoon over cooked jasmine rice, garnish with green onions and sesame seeds. Enjoy!
