- 3 tbsp soy sauce
- 1 tbsp honey
- 1 tbsp rice vinegar
- ½ tsp ginger, grated
- ½ tsp red pepper flakes (optional)
- 2 cups cooked jasmine rice
- 1 tbsp cornstarch + 2 tbsp water (for thickening)
- 2 tbsp green onions, chopped (for garnish)
- 1 tbsp sesame seeds (optional)
Instructions
- Cook the Chicken: Heat olive oil in a pan over medium heat. Add diced chicken and cook until golden brown.
- Sauté Veggies: Add bell peppers and garlic, cooking for 2-3 minutes until fragrant.
- Make the Sauce: Stir in pineapple chunks, pineapple juice, soy sauce, honey, rice vinegar, ginger, and red pepper flakes.
- Thicken the Sauce: Mix cornstarch with water, add to the pan, and stir until the sauce thickens.
