  • 1 (15-ounce) can of white beans, drained and rinsed
  • 1 (5-ounce) can of tuna, drained
  • 1/2 red onion, finely chopped
  • 1 cup cherry tomatoes, halved
  • 1/2 cucumber, diced
  • 1/4 cup fresh parsley, chopped
  • 2 tablespoons olive oil
  • 1 tablespoon red wine vinegar
  • Salt and pepper, to taste
  • Optional: 1/4 teaspoon red pepper flakes

  • Instructions

  • In a large mixing bowl, combine the drained and rinsed white beans and the drained tuna. Gently break the tuna into chunks.
  • Add the finely chopped red onion, halved cherry tomatoes, diced cucumber, and fresh parsley to the bowl.
  • In a small bowl, whisk together the olive oil, red wine vinegar, salt, and pepper. Add red pepper flakes if desired.
  • Pour the dressing over the bean and tuna mix and toss gently until coated.
  • Let the salad sit for about 10 minutes before serving to allow flavors to meld.
  • Taste and adjust seasoning if necessary before serving.
