1 (15-ounce) can of white beans, drained and rinsed
1 (5-ounce) can of tuna, drained
1/2 red onion, finely chopped
1 cup cherry tomatoes, halved
1/2 cucumber, diced
1/4 cup fresh parsley, chopped
2 tablespoons olive oil
1 tablespoon red wine vinegar
Salt and pepper, to taste
Optional: 1/4 teaspoon red pepper flakes
In a large mixing bowl, combine the drained and rinsed white beans and the drained tuna. Gently break the tuna into chunks.
Add the finely chopped red onion, halved cherry tomatoes, diced cucumber, and fresh parsley to the bowl.
In a small bowl, whisk together the olive oil, red wine vinegar, salt, and pepper. Add red pepper flakes if desired.
Pour the dressing over the bean and tuna mix and toss gently until coated.
Let the salad sit for about 10 minutes before serving to allow flavors to meld.
Taste and adjust seasoning if necessary before serving.
