Rich, creamy, and full of bold flavor, this Tuscan sausage pasta combines hearty Italian sausage with sun-dried tomatoes, spinach, and a velvety cream sauce. It’s a cozy, crowd-pleasing dish that tastes like comfort in every bite.

Ingredients

Scale
  • 8 oz pasta (penne or rigatoni)

  • 1/2 lb Italian sausage (mild or spicy)

  • 2 garlic cloves, minced

  • 1/2 cup sun-dried tomatoes, chopped

  • 1 cup baby spinach

  • 1 cup heavy cream

  • 1/4 cup grated Parmesan cheese

  • Salt & pepper, to taste

  • Optional: red pepper flakes for heat

Instructions

  • Cook pasta: Boil in salted water until al dente. Reserve 1/2 cup of pasta water, then drain.

  • Brown sausage: In a skillet, cook sausage until browned. Add garlic and sauté 1 minute.

  • Build sauce: Stir in sun-dried tomatoes, cream, and Parmesan. Simmer until thickened.

  • Add spinach: Toss in spinach and let it wilt.

  • Combine: Add pasta and reserved water. Stir to coat. Season with salt, pepper, and optional chili flakes.

  • Serve hot: Garnish with more Parmesan if desired.

Notes

  • Swap cream for half-and-half to lighten the sauce.

  • Use gluten-free pasta if needed.

  • For extra richness, add a splash of white wine before the cream.
