2 cans (15 oz) of white beans, drained and rinsed
1 medium onion, chopped
2 cloves of fresh garlic, minced
2 medium carrots, diced
2 celery stalks, diced
4 cups vegetable or chicken broth
2 tbsp olive oil
1 tsp dried thyme
1 tsp dried rosemary
Salt and pepper to taste
Fresh parsley for garnish (optional)
Instructions
In a large pot, heat the olive oil over medium heat. Add the chopped onion, and sauté for about 5 minutes until it becomes translucent. Add the minced garlic, and cook for another minute until fragrant.
Toss in the diced carrots and celery. Sauté for about 5-7 minutes until they start to soften.
Sprinkle in the dried thyme and rosemary. Stir everything together.
Add the rinsed white beans to the pot, and carefully stir them in.
Pour in the broth and bring the mixture to a gentle boil. Once it’s bubbling, reduce the heat and let it simmer for about 15-20 minutes.
After simmering, taste your soup and add salt and pepper accordingly.
For a creamier texture, blend about half the soup using an immersion blender.
Ladle the warm soup into bowls, drizzle with a little extra virgin olive oil, and sprinkle with fresh parsley if you fancy.
