This Mediterranean-inspired salad features crisp veggies, hearty chickpeas, and a tangy tzatziki dressing. It’s perfect as a side dish, light lunch, or picnic favorite.
Ingredients

1 can (15 oz) chickpeas, drained and rinsed

1 cup cucumber, diced

1 cup cherry tomatoes, halved

¼ cup red onion, finely chopped

¼ cup crumbled feta cheese

2 tbsp fresh dill or parsley, chopped (optional)
For the Tzatziki Dressing:

½ cup plain Greek yogurt

1 tbsp olive oil

1 tbsp lemon juice
-
1 clove garlic, minced

¼ cup grated cucumber (squeeze out excess water)

Salt and pepper to taste
Instructions

Make the tzatziki dressing: In a small bowl, combine yogurt, olive oil, lemon juice, garlic, grated cucumber, salt, and pepper. Mix well and chill.

In a large bowl, combine chickpeas, cucumber, tomatoes, red onion, and feta.

Add the tzatziki dressing and toss until everything is evenly coated.

Garnish with fresh dill or parsley if using. Chill before serving for best flavor.
