Ingredients

  • 1 can (15 oz) chickpeas, drained and rinsed

  • 1 cup cucumber, diced

  • 1 cup cherry tomatoes, halved

  • ¼ cup red onion, finely chopped

  • ¼ cup crumbled feta cheese

  • 2 tbsp fresh dill or parsley, chopped (optional)

For the Tzatziki Dressing:

  • ½ cup plain Greek yogurt

  • 1 tbsp olive oil

  • 1 tbsp lemon juice

  • 1 clove garlic, minced

  • ¼ cup grated cucumber (squeeze out excess water)

  • Salt and pepper to taste


Instructions

  • Make the tzatziki dressing: In a small bowl, combine yogurt, olive oil, lemon juice, garlic, grated cucumber, salt, and pepper. Mix well and chill.

  • In a large bowl, combine chickpeas, cucumber, tomatoes, red onion, and feta.

  • Add the tzatziki dressing and toss until everything is evenly coated.

  • Garnish with fresh dill or parsley if using. Chill before serving for best flavor.
