3–4 lbs beef chuck roast
1 tablespoon olive oil
1 medium onion, diced
4 cloves fresh garlic, minced
1 cup beef broth
1 cup BBQ sauce
2 tablespoons brown sugar
1 tablespoon Worcestershire sauce
1 tablespoon apple cider vinegar
1 teaspoon smoked paprika
1 teaspoon chili powder
Salt and pepper to taste
Instructions
Prepare the Beef: Trim any excess fat from the beef chuck roast.
Sear It Up: Heat olive oil in a large skillet. Season the beef with salt and pepper and sear all sides until browned.
Add Aromatics: Remove the beef, add diced onion, sauté until soft, then add minced garlic.
Build the Flavor: Deglaze the skillet with beef broth and stir in BBQ sauce, brown sugar, Worcestershire sauce, apple cider vinegar, smoked paprika, and chili powder. Simmer for a couple of minutes.
Combine and Cook: Place seared beef in a slow cooker or Instant Pot. Pour sauce mixture over top. Cook on low for 8 hours or high for 4-5 hours. For Instant Pot, cook on high for 60 minutes.
Shred the Beef: Transfer beef to a cutting board and shred using two forks. Return beef to the sauce.
