This Ultimate Chipotle Ranch Grilled Chicken Burrito combines smoky grilled chicken with creamy chipotle ranch sauce wrapped in a warm tortilla. Packed with fresh veggies and bold flavors, it’s perfect for a hearty meal.
Ingredients
2 large chicken breasts
2 tbsp olive oil
1 tbsp chipotle chili powder
1 tsp smoked paprika
1 tsp garlic powder
Salt and pepper to taste
4 large flour tortillas
1 cup cooked rice
1 cup black beans, drained and rinsed
1 cup shredded cheddar cheese
1/2 cup corn kernels
1/2 cup diced tomatoes
1/4 cup chopped cilantro
For Chipotle Ranch Sauce:
1/2 cup mayonnaise
1/4 cup sour cream
1 tbsp chipotle in adobo sauce, minced
1 tsp lime juice
1 tsp ranch seasoning mix
Instructions
1. In a bowl, combine olive oil, chipotle chili powder, smoked paprika, garlic powder, salt, and pepper.
2. Coat chicken breasts with the spice mixture.
3. Preheat grill or grill pan to medium-high heat. Grill chicken for 6-7 minutes per side or until fully cooked.
4. Let chicken rest for 5 minutes, then slice thinly.
5. Prepare the chipotle ranch sauce by mixing mayonnaise, sour cream, minced chipotle, lime juice, and ranch seasoning.
6. Warm tortillas on grill or skillet.
7. Assemble burritos: layer rice, black beans, grilled chicken slices, corn, tomatoes, cheese, cilantro, and drizzle chipotle ranch sauce.
8. Roll tortillas tightly and serve immediately.
Notes
For extra heat, add sliced jalapeños.
Substitute sour cream with Greek yogurt for a healthier sauce.
Use whole wheat tortillas for added fiber.
