  • 2 tablespoons soy sauce or tamari
  • 1 tablespoon lemon juice
  • 1 teaspoon dried oregano

  • Instructions

  • Start by draining your tofu and pressing it to remove excess moisture for about 15-20 minutes.
  • Once pressed, cut the tofu into scallop-sized pieces, about 1/2 inch thick.
  • In a large skillet, heat the olive oil over medium-high heat. Cook the tofu slices for about 4-5 minutes on each side until golden brown and crisp. Remove from skillet.
  • In the same skillet, add the chopped onion and sauté for about 3-4 minutes until translucent. Add minced garlic and cook for another minute.
  • Pour in the coconut milk, followed by soy sauce, lemon juice, oregano, salt, and pepper. Stir well and let it simmer for about 5-7 minutes.
  • Return the crispy tofu to the skillet, gently tossing it in the creamy sauce. Heat everything through for a couple of minutes.
  • Remove from heat and serve hot, garnished with fresh parsley or basil if desired.
