1 block (14 oz) firm tofu, drained and pressed
1 tablespoon olive oil (for frying)
1 medium onion, finely chopped
3 cloves fresh garlic, minced
1 can (13.5 oz) coconut milk
2 tablespoons soy sauce or tamari
1 tablespoon lemon juice
1 teaspoon dried oregano
Salt and pepper to taste
Fresh parsley or basil for garnish (optional)
Instructions
Start by draining your tofu and pressing it to remove excess moisture for about 15-20 minutes.
Once pressed, cut the tofu into scallop-sized pieces, about 1/2 inch thick.
In a large skillet, heat the olive oil over medium-high heat. Cook the tofu slices for about 4-5 minutes on each side until golden brown and crisp. Remove from skillet.
In the same skillet, add the chopped onion and sauté for about 3-4 minutes until translucent. Add minced garlic and cook for another minute.
Pour in the coconut milk, followed by soy sauce, lemon juice, oregano, salt, and pepper. Stir well and let it simmer for about 5-7 minutes.
Return the crispy tofu to the skillet, gently tossing it in the creamy sauce. Heat everything through for a couple of minutes.
Remove from heat and serve hot, garnished with fresh parsley or basil if desired.
