1 medium head of green cabbage, chopped
2 tablespoons of olive oil
1 large onion, diced
2 cloves of fresh garlic, minced
2 medium carrots, diced
2 celery stalks, diced
1 bell pepper, diced
4 cups of vegetable broth
1 can (14.5 oz) of diced tomatoes, undrained
1 teaspoon of dried thyme
1 teaspoon of dried oregano
Salt and pepper, to taste
1 bay leaf
2 cups of green beans, trimmed and cut into bite-sized pieces
Fresh parsley, for garnish
Start by heating the olive oil in a large pot over medium heat.
Add the diced onion and sauté until it becomes soft and fragrant, about 5 minutes.
Toss in the minced garlic and cook for an additional 1-2 minutes.
Next, add the diced carrots, celery, and bell pepper, and cook for another 5 minutes.
Add the chopped cabbage and mix it well with the other vegetables.
Pour in the vegetable broth and canned diced tomatoes, and add the bay leaf. Bring to a gentle boil.
Once boiling, reduce the heat to low and add the thyme and oregano. Let simmer for 20-25 minutes.
After 20 minutes, add the green beans and any additional vegetables. Cook for another 10 minutes.
Taste and season with salt and pepper.
Remove the bay leaf before serving.
