These Vegetable Spring Rolls are light, refreshing, and packed with crisp veggies, fresh herbs, and rice noodles, all wrapped in delicate rice paper. Paired with a creamy, flavorful peanut sauce, they make the perfect appetizer or healthy snack!
Ingredients
For the Spring Rolls:
- 8 rice paper wrappers
- 1 cup cooked rice noodles
- 1 cup shredded carrots
- 1 cup julienned cucumbers
- 1 cup red bell pepper strips
- 1/2 cup fresh mint leaves
- 1/2 cup fresh cilantro leaves
- 1/2 cup shredded purple cabbage
For the Peanut Sauce:
- 1/4 cup peanut butter
- 2 tbsp soy sauce
- 1 tbsp lime juice
- 1 tbsp honey or maple syrup
- 1 tsp sesame oil
- 1–2 tbsp warm water (to thin)
Instructions
1️⃣ Make the Peanut Sauce – Whisk all ingredients together until smooth. Adjust consistency with water if needed.
2️⃣ Prepare the Fillings – Slice and prep all vegetables and cook the rice noodles according to package instructions.
3️⃣ Assemble the Rolls – Soften a rice paper wrapper in warm water for 10 seconds. Lay it flat and place a small portion of each ingredient in the center.
4️⃣ Roll It Up – Fold in the sides, then roll tightly like a burrito. Repeat with remaining wrappers.
