12 oz of pasta (penne or rotini)
1 cup cherry tomatoes, halved
1 cucumber, diced
1 red bell pepper, diced
1 small red onion, finely chopped
1 cup black olives, sliced (optional)
1 cup feta cheese, crumbled (or plant-based cheese for vegan option)
1/4 cup fresh parsley, chopped
1/4 cup fresh basil, chopped (or 1 tsp dried basil)
1/4 cup olive oil
2 tbsp red wine vinegar
1 tsp Dijon mustard
Salt and pepper to taste
Instructions
In a large pot, bring salted water to a boil. Add the pasta and cook according to package instructions until al dente, usually around 8 to 10 minutes.
While the pasta cooks, chop up all your delicious veggies.
In a small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, salt, and pepper to make the dressing.
Once the pasta is cooked, drain it and rinse it under cold water to cool it down. Transfer the pasta to a large bowl and add in the chopped veggies, feta, and fresh herbs.
Drizzle the dressing over the salad and gently toss everything together until well combined. Serve it immediately, or let it chill in the fridge for 30 minutes to meld the flavors.
If you have any leftovers, simply cover tightly and refrigerate for up to 3 days.
