2 pounds of sweet potatoes, peeled and cubed
4 tablespoons of unsalted butter, divided
4 cloves of fresh garlic, minced
1 teaspoon of dried thyme or 2 teaspoons of fresh thyme, finely chopped
Salt, to taste
Pepper, to taste
1–2 tablespoons of hot honey
Chopped fresh parsley or chives, for garnish
Instructions
Boil the Sweet Potatoes: Place the cubed sweet potatoes in a large pot and cover with cold water. Add a pinch of salt. Bring to a boil, then reduce to a simmer and cook for about 15-20 minutes, or until fork-tender.
Prep the Garlic Herb Butter: While the sweet potatoes are boiling, melt 2 tablespoons of butter in a small skillet over medium heat. Add the minced garlic and thyme. Sauté for 2-3 minutes until fragrant and the garlic becomes golden. Set aside.
Drain and Mash: Once the sweet potatoes are tender, drain them and return to the pot. Add the remaining 2 tablespoons of butter, salt, and pepper to taste. Using a potato masher or hand mixer, whip until smooth and creamy.
Combine: Pour in the garlic herb butter and fold it into the whipped sweet potatoes until well combined. Adjust the seasoning as necessary.
Drizzle with Honey: To serve, place the whipped sweet potatoes in a serving bowl, then drizzle with hot honey.
Garnish: Sprinkle with chopped parsley or chives.
