  • 1 medium yellow onion, sliced thinly
  • 2 cloves of garlic, minced
  • 2 tbsp olive oil
  • 1 tsp fresh rosemary, chopped
  • 1 tbsp lemon juice, freshly squeezed
  • Salt and pepper, to taste
  • Optional: red pepper flakes for some heat

  • Instructions

  • Caramelize the Onions: In a skillet, heat the olive oil over medium-low heat. Add the sliced onions and a sprinkle of salt. Cook them slowly for about 20-25 minutes, stirring occasionally, until they are beautifully golden and caramelized. Don’t rush this step; low and slow is the key to unlocking those sweet flavors!
  • Add Garlic and Rosemary: When the onions are ready (and your kitchen smells heavenly!), stir in the minced garlic and fresh rosemary. Cook for another 2-3 minutes until the garlic is fragrant. You don’t want to burn your garlic, so keep an eye on it!
  • Blend It Up: Transfer the caramelized onion mixture to a food processor. Add the rinsed white beans and lemon juice, then blend until smooth and creamy. You may need to scrape down the sides to ensure everything gets mixed well! If it’s too thick, just add a splash of water or olive oil to reach your desired consistency.
