1 can (15 oz) of white beans (cannellini or great northern), drained and rinsed
1 medium yellow onion, sliced thinly
2 cloves of garlic, minced
2 tbsp olive oil
1 tsp fresh rosemary, chopped
1 tbsp lemon juice, freshly squeezed
Salt and pepper, to taste
Optional: red pepper flakes for some heat
Instructions
Caramelize the Onions: In a skillet, heat the olive oil over medium-low heat. Add the sliced onions and a sprinkle of salt. Cook them slowly for about 20-25 minutes, stirring occasionally, until they are beautifully golden and caramelized. Don’t rush this step; low and slow is the key to unlocking those sweet flavors!
Add Garlic and Rosemary: When the onions are ready (and your kitchen smells heavenly!), stir in the minced garlic and fresh rosemary. Cook for another 2-3 minutes until the garlic is fragrant. You don’t want to burn your garlic, so keep an eye on it!
Blend It Up: Transfer the caramelized onion mixture to a food processor. Add the rinsed white beans and lemon juice, then blend until smooth and creamy.
