  • 1 tbsp olive oil
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 (4 oz) can diced green chilies
  • 1 tsp cumin
  • 1 tsp chili powder
  • ½ tsp smoked paprika
  • ½ tsp salt
  • ¼ tsp black pepper
  • 3 cups chicken broth
  • 1 (15 oz) can white beans, drained and rinsed
  • ½ cup frozen corn
  • ½ cup sour cream (or Greek yogurt)
  • ½ cup heavy cream (or half-and-half)
  • ½ cup shredded Monterey Jack or cheddar cheese
  • Juice of 1 lime
  • Fresh cilantro and avocado, for garnish

Instructions

  • Sauté Aromatics: Heat olive oil in a large pot over medium heat. Add onions and garlic, sautéing for 2-3 minutes until softened.
  • Cook Chicken & Seasonings: Add chicken, green chilies, cumin, chili powder, paprika, salt, and pepper. Stir well.
  • Simmer: Pour in chicken broth, white beans, and corn. Bring to a boil, then reduce heat and simmer for 20 minutes until chicken is tender.
  • Shred & Make it Creamy: Remove chicken, shred with two forks, and return to the pot. Stir in sour cream, heavy cream, and cheese. Cook for another 5 minutes until warmed through.
  • Serve & Enjoy: Add a squeeze of lime juice and garnish with fresh cilantro, avocado, or extra cheese.
