- 1 lb boneless, skinless chicken breasts (or thighs)
- 1 tbsp olive oil
- 1 small onion, diced
- 3 cloves garlic, minced
- 1 (4 oz) can diced green chilies
- 1 tsp cumin
- 1 tsp chili powder
- ½ tsp smoked paprika
- ½ tsp salt
- ¼ tsp black pepper
- 3 cups chicken broth
- 1 (15 oz) can white beans, drained and rinsed
- ½ cup frozen corn
- ½ cup sour cream (or Greek yogurt)
- ½ cup heavy cream (or half-and-half)
- ½ cup shredded Monterey Jack or cheddar cheese
- Juice of 1 lime
- Fresh cilantro and avocado, for garnish
Instructions
- Sauté Aromatics: Heat olive oil in a large pot over medium heat. Add onions and garlic, sautéing for 2-3 minutes until softened.
- Cook Chicken & Seasonings: Add chicken, green chilies, cumin, chili powder, paprika, salt, and pepper. Stir well.
- Simmer: Pour in chicken broth, white beans, and corn. Bring to a boil, then reduce heat and simmer for 20 minutes until chicken is tender.
- Shred & Make it Creamy: Remove chicken, shred with two forks, and return to the pot. Stir in sour cream, heavy cream, and cheese. Cook for another 5 minutes until warmed through.
- Serve & Enjoy: Add a squeeze of lime juice and garnish with fresh cilantro, avocado, or extra cheese.
