8 oz udon noodles
1 lb shrimp, peeled and deveined
1 cup bell peppers, sliced
1 cup carrots, julienne
2 cups broccoli florets
3 green onions, chopped
4 cloves garlic, minced
3 tbsp soy sauce
1 tbsp oyster sauce
1 tbsp sesame oil
2 tbsp vegetable oil
Salt and pepper to taste
Instructions
Cook the Noodles: Bring a large pot of water to a boil. Add the udon noodles and cook according to the package instructions, usually around 3-5 minutes. Drain and rinse under cold water to stop cooking. Set aside.
Prepare Your Ingredients: While the noodles are cooking, chop all your veggies, shrimp, and garlic. It’s better to have everything ready to go—you’ll thank yourself later!
Heat the Pan: In a large wok or skillet, heat 1 tbsp of vegetable oil over medium-high heat until it’s hot but not smoking.
Sauté the Shrimp: Add the shrimp to the pan, cooking until they turn pink and opaque—about 2-3 minutes. Remove from the pan and set aside.
Add More Veggies: Without cleaning the pan, add another tablespoon of oil if needed, then toss in the garlic, bell peppers, carrots, and broccoli. Stir-fry for about 3-4 minutes until they’re tender-crisp.
Combine Everything: Add the drained udon noodles and shrimp back into the pan. Pour in the soy sauce, oyster sauce, and sesame oil. Use tongs to toss everything together—make sure the noodles are well coated! This is where it gets magical.
