8 ounces of rice noodles
2 tablespoons of sesame oil
2 cloves of fresh garlic, minced
1 teaspoon of fresh ginger, minced
1/3 cup of orange juice, freshly squeezed
2 tablespoons of rice vinegar
2 tablespoons of soy sauce, low-sodium
1 tablespoon of agave syrup
1 medium-sized carrot, julienned or grated
1 bell pepper, thinly sliced
1 cup of cucumbers, julienned
3 scallions, thinly sliced
2 tablespoons of toasted sesame seeds
1/4 cup of cilantro, chopped (optional)
Instructions
Cook the noodles: Bring a large pot of water to a boil. Toss in the rice noodles and cook according to package instructions (usually around 4-6 minutes). Drain and rinse under cold water.
Make the dressing: In a medium bowl, whisk together the sesame oil, minced garlic, ginger, orange juice, rice vinegar, soy sauce, and agave syrup until well combined.
Prep the veggies: While the noodles are cooking, julienne the carrot, slice the bell pepper, and cucumber.
Toss it all together: In a large mixing bowl, combine the drained noodles, veggies, and prepared dressing. Mix everything until it’s beautifully coated.
Garnish and serve: Sprinkle the scallions, toasted sesame seeds, and chopped cilantro over the top. Enjoy!
