Ingredients
2 tablespoons olive oil
1 medium onion, diced
3 cloves garlic, minced
2 medium zucchinis, diced
1 red bell pepper, diced
1 can (15 oz) black beans, drained and rinsed
1 can (15 oz) diced tomatoes
1 cup vegetable broth
2 tablespoons chili powder
1 teaspoon ground cumin
1 teaspoon smoked paprika
Salt and pepper to taste
Fresh cilantro, chopped (for garnish)
Instructions
1. Heat olive oil in a large pot over medium heat.
2. Add diced onion and garlic; sauté until fragrant and translucent.
3. Add diced zucchini and red bell pepper; cook for 5 minutes until slightly softened.
4. Stir in black beans, diced tomatoes, and vegetable broth.
5. Add chili powder, cumin, smoked paprika, salt, and pepper; stir to combine.
6. Bring to a boil, then reduce heat and simmer for 20 minutes.
7. Adjust seasoning as needed.
8. Serve hot, garnished with fresh cilantro.
Notes
Use fresh or frozen beans according to preference.
