4–5 ripe tomatoes, diced
1/4 cup fresh basil, chopped
3–4 cloves garlic, minced
2 tablespoons balsamic vinegar
1/4 cup extra virgin olive oil
Salt and black pepper, to taste
1 loaf of crusty bread
Optional: grated Parmesan cheese for topping
In a bowl, combine diced tomatoes, minced garlic, and chopped basil.
Drizzle in balsamic vinegar and olive oil, stir gently, and season with salt and pepper. Let it sit for 10-15 minutes.
Preheat oven to 400°F (200°C), slice bread into 1-inch thick pieces, and toast them on a baking sheet for about 5-7 minutes.
Spoon the tomato mixture onto each slice of toasted bread and sprinkle with grated Parmesan cheese if desired.
