  • Instructions

  • Boil the Potatoes: Fill a large pot with cold, salted water and add the potatoes. Bring to a rolling boil, then reduce to a gentle simmer. Cook for about 15-20 minutes, or until the potatoes are fork-tender but not mushy.
  • Drain and Cool: Drain the potatoes and let them cool in the pot for a few minutes. Once they’re cool enough to handle, chop them into bite-sized pieces.
  • Make the Dressing: In a mixing bowl, whisk together the mayonnaise, Dijon mustard, and apple cider vinegar until smooth. Add salt and pepper to taste.
  • Combine Ingredients: In a large mixing bowl, add the chopped potatoes, celery, red onion, and hard-boiled eggs. Gently fold in the dressing, being careful not to overmix.
  • Chill Out: Cover the potato salad and let it chill in the fridge for at least 30 minutes.
