2 pounds of medium-sized potatoes (Yukon Gold or red)
1 cup mayonnaise
2 tablespoons Dijon mustard
1 tablespoon apple cider vinegar
1 small red onion, finely chopped
2 stalks of celery, diced
3 large hard-boiled eggs, chopped
Salt and freshly cracked black pepper to taste
Fresh parsley, chopped for garnish
Instructions
Boil the Potatoes: Fill a large pot with cold, salted water and add the potatoes. Bring to a rolling boil, then reduce to a gentle simmer. Cook for about 15-20 minutes, or until the potatoes are fork-tender but not mushy.
Drain and Cool: Drain the potatoes and let them cool in the pot for a few minutes. Once they’re cool enough to handle, chop them into bite-sized pieces.
Make the Dressing: In a mixing bowl, whisk together the mayonnaise, Dijon mustard, and apple cider vinegar until smooth. Add salt and pepper to taste.
Combine Ingredients: In a large mixing bowl, add the chopped potatoes, celery, red onion, and hard-boiled eggs. Gently fold in the dressing, being careful not to overmix.
