Description
These Greek Chicken Kabobs feature juicy marinated chicken pieces grilled to perfection with vibrant flavors from lemon, garlic, oregano, and olive oil. They make a perfect meal for summer BBQs and casual dinners.
Ingredients
1 1/2 pounds boneless, skinless chicken breasts or thighs, cut into 1-inch pieces
3 tablespoons olive oil
2 tablespoons fresh lemon juice
3 cloves garlic, minced
1 tablespoon dried oregano
1 teaspoon salt
1/2 teaspoon black pepper
Wooden or metal skewers, soaked if wooden
Optional: chopped fresh parsley and lemon wedges for serving
Instructions
1. In a bowl, whisk together olive oil, lemon juice, garlic, oregano, salt, and pepper.
2. Add chicken pieces and toss to coat. Marinate for at least 30 minutes, up to 4 hours.
3. Preheat grill to medium-high heat.
4. Thread chicken onto skewers, leaving a little space between pieces.
5. Grill kabobs for 10–12 minutes, turning occasionally, until cooked through and slightly charred.
6. Remove from grill and let rest for 5 minutes.
7. Serve garnished with fresh parsley and lemon wedges.
Notes
Use thighs for juicier kabobs.
Soak wooden skewers in water for 30 minutes to prevent burning.
Serve with tzatziki sauce or pita bread for an authentic touch.
