1 pound of kielbasa, cut into 1-inch pieces
1 pound of fresh sausage (like bratwurst or Italian sausage), casings removed
1 tablespoon of olive oil
1 medium onion, chopped
2 cloves of garlic, minced
1 cup of stout beer (like Guinness or your favorite local brew)
2 cups of shredded cheese (monterey jack, cheddar, or a blend)
1 can (10 oz) of diced tomatoes with green chilies
1 teaspoon of smoked paprika
1/2 teaspoon of ground cumin
Salt and pepper, to taste
Chopped fresh cilantro or green onions, for garnish
