3 cups of chopped rhubarb (about 4–5 rhubarb stalks)
2 cups of hulled and chopped strawberries
1 cup of granulated sugar
2 tablespoons of fresh lemon juice
1 tablespoon of chia seeds
1/2 teaspoon of vanilla extract (optional)
Instructions
Wash rhubarb and strawberries thoroughly. Chop rhubarb into 1-inch pieces and hull and chop strawberries into quarters.
In a large mixing bowl, combine chopped rhubarb, strawberries, granulated sugar, and lemon juice. Toss to coat and let sit for 30 minutes.
Pour the macerated fruit mixture into a large saucepan over medium heat. Stir occasionally and bring to a gentle boil. Once bubbling, reduce heat to simmer.
After 10-15 minutes of simmering, add chia seeds and stir well. Cook for another 5-10 minutes until desired consistency is reached.
To test consistency, place a spoonful on a plate, cool for a minute, and run a finger through it. If it holds shape, it's ready!
Remove from heat, stir in vanilla extract if using, let cool to room temperature, then transfer to sterilized jars and seal tightly.
