1 French baguette or Ciabatta bread (stale works too for extra crunch!)
4–5 medium ripe tomatoes, diced
4 oz goat cheese, crumbled
1/4 cup fresh basil, finely chopped
2 cloves of garlic, minced
2 tablespoons extra virgin olive oil
Salt and pepper to taste
Balsamic glaze for drizzling (optional)
Instructions
Preheat your oven to 400°F (200°C). Slice the baguette or Ciabatta into 1-inch thick slices. Arrange them on a baking sheet and brush one side lightly with olive oil.
Pop your baking sheet into the preheated oven and bake for about 5-7 minutes, or until the edges are golden and toasty.
In a sizeable mixing bowl, combine the diced tomatoes, goat cheese, minced garlic, and chopped basil. Drizzle in the olive oil and season with salt and pepper. Gently fold the mixture until well combined.
Once your bread is crisp and golden, remove it from the oven and let it cool for a minute. Spoon a hearty amount of the tomato mixture onto each slice of bread.
