4 large carrots (about 1 pound)
1 medium cucumber, thinly sliced
1 bell pepper (red, yellow, or orange), sliced into thin strips
1/4 cup fresh parsley, finely chopped
1/4 cup fresh mint, finely chopped
1/3 cup toasted nuts (almonds, walnuts, or sunflower seeds)
3 tablespoons olive oil
1 tablespoon apple cider vinegar
1 tablespoon honey or maple syrup
Salt and pepper to taste
Wash and peel the carrots, creating ribbons with a vegetable peeler or spiralizer.
Thinly slice the cucumber and bell pepper.
In a large bowl, combine the carrot ribbons, cucumber slices, and bell pepper strips. Add the chopped parsley and mint.
